camping pots question by qazwsxedc: Need a meal idea in less than 24 hours!!! boy scout cooking. needs to cook in only one pot. we’ll be camping.
I need an idea for a one pot dinner. On this boy scout trip, i need a nice big one pot dinner that will satisfy 7-10 people. I will probably include Ramen noodles, but i need help, something that the leaders will aprove of. and nothing too complicated, because we will be in the middle of the woods while doing this.

sloppy Joe’s could be made ahead and heat it up in one pot at the campground.







You can use the ramen noodles to make a spaghetti dinner, grab a bag of premade meatballs from the freezer aisle-you can xut them with a sharp knife into 2 or 3 slices per ball for faster cooking or make your own and do the same. make a sauce or buy a plain one and viola -pot of spaghetti
By the way did you know that your troop can earn badges from wigs for kids http://www.wigs4kids.org They are $ 2 apiece and will help a good cause. Spread the word to other troops.

I did my cooking merit badge on a similar situation, doing what I called a “garbage omelet”.
The only trick would be the eggs…I pre cracked a bunch into a container (it was cool out, otherwise pack it in some ice). Then cooked with potato’s, peppers, salami, cheeses, tomato’s anything you may like that will add bulk and taste. Put butter in the pan, cut the potato pieces really small/thin, toss all but the eggs in, cook it for five to ten minutes, then throw in the eggs. You can do it scrambled or omelet style, doesn’t look pretty, but tastes damned good!

Chicken or Pork Tortilla Casserole

4 chicken breasts cooked and shredded or 1 lb. cooked and cubed pork
½ pound tortilla chips
1 pound cheddar cheese, grated, add some pepper jack cheese
2 Ortega chilies, diced
Mix together:
1 can cream of mushroom soup
1 can cream of chicken soup
1 cup milk or sour cream
1 large chopped onion
1 7 oz can green chili salsa
Grease a 12 inch Dutch oven. Crumble half of the chips into bottom; then layer of chicken, a layer of soup mixture, a layer of cheese. Repeat layers, ending with cheese.
Bake at 300° for 1 ½ hours Serves 8
Dave’s Dutch Tamale Pie

1 lb. ground turkey (try lean ground round)
1 ½ Tbs. chili powder
½ tsp. cumin
1 tsp. fajita seasoning
2 Tbs. garlic, minced
1 28oz. can diced tomatoes
1 15 oz. can whole kernel corn (try hominy, YUM!)
1 8 oz. can diced green chilies
1 ½ c. shredded Colby cheddar cheese
½ c. chicken broth
1 12 oz. box corn muffin mix
½ c. milk
2 Tbs. melted butter or vegetable oil
1 large egg
In a 12” deep Dutch oven, brown turkey with chili powder,
cumin, and minced garlic. Add tomatoes, corn and chilies. Stir well. Add broth, stir. Layer cheese over the top of meat mixture.
Mix corn bread mix, milk, butter, and egg. Spoon over turkey mix and cheese evenly. Cover and bake at about 375o for 35 to 45 minutes until bread is firm and baked through.

Upside-down Chocolate Cherry Surprise

1 15 oz. can Bing cherries
1 box devils food cake mix
½ c. pecans, chopped
1 tsp. almond extract
½ c. cherry flavored cola
Open the can of cherries and carefully stir in the almond
extract. In a well oiled, preheated 10” Dutch oven, pour the cherry almond mixture. Sprinkle the cherries evenly with the pecans.
Sprinkle the cake mix over the cherries and pecans, then
pour the cola over the cake mix as evenly as possible. Bake 35 minutes or until you can smell it. Turn out onto a 12” Dutch oven lid on a lid trivet. Serve hot.
Serves 6 well fed campers
