grills for camping question by yo?: Need some ideas for some good grilling foods to take camping besides the usual burgers, hotdogs..etc?
I’ve done the burgers, steak, kabob thing I want to try something new. Any recipes? Ideas? Even ideas for salads would be helpful.

Grilled fruit is delicious!
Make a kebab of pineapple, peaches or nectarines, plums and strawberries. Halve the fruit and stick them on kebabs sticks (skewers) and lay them on the grill halve side down. Grill until you get nice grill marks. You can also put sugar on the fruit before grilling to get a carmelized taste.
When using wooden skewers, soak in water for a half an hour so they don’t burst into flames on the grill.

fresh fruit kabobs on the grill are great.
we do pasta, it’s easier than it sounds. Or fish. Brats. Grilled cheese. Oh and take a look at the potatoe question about not using a deep fryer. we just did sliced and fried potatoes with onions, we used butter, it was most delicious.
Oh… hobo stew. Stew meat, potatoes, tomatoes, corn (frozen) and green beans… cream of something soup. You can do that over the fire in a long flat thing.
Here is a meal we make every time we go camping, it’s delicious!
You need chicken breast, tin foil, various vegetables, and a campfire/grill.
Put the chicken in the tin foil, add whatever vegetables the person happens to like, for example I always like potatoes, corn, snap peas, carrots (a billion different options!), wrap up the whole thing, and set in fire until cooked. All of the juices simmer together and its divine!
Other vegetables to use: onions, bell peppers, mmm having a brain block but there are tons of options. You can even precut everything and just put them in plastic baggies so it’s a cinch to make =) & smores for dessert!

This is a super easy and everybody have it their own way recipe but very yummy and perfect for camping.
Before you start to make the omelets you will need to set a pot of water on to boil which can be on your camp stove or over your campfire.
You need the quart size freezer ziplocs, 1 for each person, then any omelet ingredients your campers prefer.
List of possibilities-ham cubes, bacon bits,diced cooked chicken, onions, green peppers, broccoli, shredded cheeses,or anything that works for you. I just set out the carton of eggs 2 per omelet and have each camper crack their eggs into the ziploc. You can also bring a small container of half and half and put some into each bag but it works well with just eggs too. then everyone chooses from the extras what they would like in their omelet, drops it in their ziploc, then zips it up and puts it into the pot of boiling water. It takes approx. 3 minutes, but you can check the doneness with tongs just lift the bag and look. It actually will roll itself up into an omelet shape in side the bag. When done just unzip roll onto your plate or into a soft tortilla, salt and pepper to taste and enjoy!!
Dutch oven chicken enchiladas
1 bag frozen chicken breasts (5 -6 ) thawed
1 can Rotelle (stewed tomatoes)
1 can tomato soup (10 3/4 ounce)
1 can Elpaso Enchilada sauce
1 small can green chilies diced
1 onion diced
2 small cans olives diced
1 bag shredded cheese
1 bag large tortillas
cook chicken in Dutch oven until done . take out of Dutch oven drain liquid. cut up chicken in bite size pieces. place in Dutch oven add rotelle ,soup ,onion ,enchilada sauce, chilies ,olives. cook until bubbling around edges. take mixture out of the Dutch oven .leave enough mixture to cover the bottom of the Dutch oven. add 1 tortilla , top with about 2 cups sauce mix , add cheese just enough to top the sauce mixture . layering this with tortillas ,sauce ,cheese. until you have no more sauce mixture. ending with cheese.
on top. cook in the Dutch oven until bubbling around the edges of the oven and the cheese is melted. serve top with sour cream . enjoy
Banana Boats
Take a large banana and peel back one section about 1 1/2″ wide. Scoop out the banana to make a cavity in the banana (will resemble a canoe). Fill the cavity with small marshmallows and milk chocolate squares. Fold the banana peel back and wrap the whole thing in aluminum foil. Put the whole banana onto hot coals in the campfire for about 10 minutes. Pull out with tongs and be careful because it is very hot. Open and eat straight out of the banana peel. It is also good over ice cream!!!!
Things I make on the grill
Chicken wings seasoned w/salt, pepper, paprika, chili pdr and grill for 15 mts until cooked . brush w/ favorite BBQ sauce and grill on high for a minute
Pork or beef short ribs/spare ribs-season w/salt and pepper, grill on low for 20 mts then brush on favorite bbq sauce and grill on high for a few mts
Grilled corn- remove threads and rewrap corn in husk and grill for 15 mts, peel back and add salt, paprika and butter
Grilled eggplant and asparagus- seoson w/ Soy Sauce, and black pepper.olive oil and place on grill for 10-15 mts
Pizza-any pizza dough brushed w/ olive oil, topped w/ fresh mozzarella and endless toppings
All the above great w/ a mango/corn salsa–chopped mango, small onion, few green chilies, cilantro, fresh corn, salt, lime or lemon juice

i use smoked sausage on kabob stick’s and ham soak the meat in juice / also pasta cooked add Italian dressing ‘ ranch black olive’s canned tomatoes with something like onion’s mixed in and a pack of pepperoni slices can add other veggies chill
CAMP APPLE DESSERT
1 apple, sliced, cored, keep skins on
2 tbsp. coconut
2 to 3 dates, chopped
2 tbsp. chopped walnuts
2 tbsp. brown sugar
2 tbsp. butter
A few mini marshmallows
Combine all in foil packages, set around coals of camp fire and cook 30 to 40 minutes turning every so often, let cool 15 minutes before eating.
CAMPING CASSEROLE
1 lb. ground beef
8 or 10 oz. dry noodles
1 qt. tomato juice
1 can mushroom stems and pieces
Cheese
Brown ground beef in large skillet or Dutch oven (season to taste). Add dry noodles.
Cover with tomato juice (the amount can be varied to cover all the noodles). Add mushrooms. Cover and simmer for approximately 20 minutes. Top with your favorite cheese and let set for a few minutes.
This is an excellent camping main dish as it takes only one pan and can easily be prepared on a camp stove.
SAUSAGE CAKES FOR CAMPING
1 egg
1 lb. ground sausage
1 1/2 tbsp. finely chopped onion
2 tbsp. chopped parsley
3/4 c. dry bread crumbs
1/4 tsp. salt
1/4 tsp. pepper
NOTE: You can prepare the patties at home before you go camping. Beat egg slightly. Mix together sausage, onion, parsley, bread crumbs, salt, pepper and beaten egg. Shape into 4 patties. Transport in a covered square container put in a cooler with ice.
AT THE CAMPSITE: Prepare 20 charcoal briquettes until they are white hot. Place patties on a hot griddle or skillet. Brown on both sides. Continue cooking for 10 to 15 minutes or until cooked all the way through. Makes 4 servings.
Also when not camping: These sausage patties can be baked at home in a 350 degree oven for 30 minutes. Place on a wire rack in a shallow pan to drain the fat while baking.
